Sautéed Mushroom and Penne with Baked Salmon
Serves-2
Ingredients for Béchamel Sauce:
- Butter- 3 tbsp.
- All purpose flour: 3 tbsp.
- Milk- 3 cups.
- Water- 1 cup.
- Salt to taste.
- Onion- 1small onion cut into half (Optional)
- Cloves- 3 pods.
Ingredients for Pasta:
- Penne- 3 cups.
- Mushroom- 5-6 roughly diced.
- Onion- 1 finely chopped.
- Bell Pepper- 1 finely chopped.
- Olive Oil- 2-3 tbsp.
- Garlic- 5 cloves finely chopped.
- Salt to taste.
- Black/White Pepper to taste.
- Oregano flakes- 1 tbsp.
- Green chilies- 2 finely chopped (optional).
- Parmesan cheese as per your choice.
Ingredients for Sautéed Buttered Mushroom:
- Mushroom- 250gms roughly diced.
- Garlic- 2 cloves finely chopped.
- Butter- 3 tbsp.
- Olive Oil- 2 tbsp.
- Salt to taste.
- Cilantro- 3 stems finely chopped.
- Black pepper to taste.
Ingredients for Baked Salmon:
- Salmon- 2 pieces (As per the servings)
- Olive Oil- 1 tbsp.
- Garlic- 2 cloves finely chopped.
- Rosemary- 1 teaspoon.
- Thyme- 1 teaspoon.
- Paprika- 1/2 teaspoon.
- Lime juice- 1 tbsp.
- Salt to taste.
Preparation:
Béchamel Sauce: (Follow the ingredients list)
- In a sauce pan, melt butter(as mentioned in the ingredients), immediately add flour and mix it together and make sure you don't make a dough.
- Once the flavour from the flour starts to evaporate slowly add milk, continuously stirring so that no lumps are formed. Continue stirring and add water.
- Once you are sure that the sauce has no lumps, at this point add 1/2 onion and cloves and allow it to come to a boil.
- At this point the sauce should be a little thicker. Turn of the gas, remove the onion and cloves and allow it to cool down.
- And your sauce is ready!
Sautéed Mushroom:(Follow the ingredients list):
- In a frying pan, add oil and melt the butter. Immediately add mushrooms, give it a good stir and cover it with the lid for 10 minutes.
- After 10 minutes check it the mushrooms have cooked and reduced in size. If not then allow it to cook with covered lid for another 5 minutes.
- Once the mushrooms are soft and buttery add very little water, chopped garlic, salt and pepper.
- I like my mushrooms to be little saucy, so I would not let all the water dry out. But if you want it dry, by all means do it!.
- Add cilantro and Sautéed mushroom is ready for the pasta.
Baked Salmon:(Follow the ingredients list):
- Pre- Heat the oven at 200 degrees centigrade.
- In a baking dish, rub salmon with salt, paprika, thyme, rosemary, lime juice and garlic. Keep it aside marinated for 15 minutes.
- After 15 minutes, put the salmon inside the oven and let it bake for 20-30 minutes depending on the oven, as every oven works differently. You will know that the fish is cooked when you see the top crust has slightly changed to brown in colour.
- Turn off the oven and keep the baking dish aside.
- Baked salmon is ready!
Pasta:(Follow the ingredients list)
- In a pan, bring water to boil, add penne and 1 teaspoon of olive oil.
- Once boiled, strain it and keep it aside.
- Heat a separate pan, (I like to use wok), add oil and sizzle chopped and add chopped bell pepper, onions, mushrooms and cook until mushrooms are soft.
- Add salt, pepper, chilies, penne and give it a good stir.
- After 5 minutes, add the béchamel sauce and incorporate everything together.
- Add parmesan cheese as much as you want :). Turn of the heat and give it a good mix.
- Add oregano flakes and your pasta is ready to serve.
Plating/Serving:
- In a serving dish, take pasta as much for per person. Add the sautéed mushrooms either on the top of on the side of the dish.
- Add baked salmon, either on the top or on the side of the dish.
- Top it with some parmesan and two glasses of wine and your very own home made delicious,Sautéed Mushroom and Penne with Baked Salmon is ready to mesmerise your guests.
