Banana and Choco
chip Muffins:
Ingredients:
1. Banana: 3 ripe or over ripe.
2. Sugar: 1 cup.
3. All-purpose Flour: 2 cups.
4. Eggs: 2.
5. Vanilla extract: 1 teaspoon.
6. Oil: 1 cup.
7. Choco chips: ½ cup.
8. Salt- A pinch.
9. Cinnamon powder- ½ teaspoon (Optional)
· I do not like to use the electric mixer
for combining this batter. As it is a very simple batter, I would stir it with
hand. But if you want, you can always use the electric mixer.
Preparation:
Ø Pre-heat the oven to 200 degrees
centigrade.
Ø Light grease your muffin tray or
muffin molds and keep them aside.
Ø In a separate bowl add 2 tablespoon
of flour and drop the Choco chips on it. Doing this will ensure that even
distribution of Choco chips on the top of the muffin and it will not sink to
the bottom of the molds.
Ø Peel the bananas and in a large
mixing bowl mash it the help of a fork.
Ø In a separate bowl crack the eggs. You
always want to crack eggs separately, just to avoid any unlucky rotten one
mixing up with rest of the ingredients.
Ø In the large bowl where you have
mashed the bananas, add oil, eggs, sugar, vanilla extract and a pinch of salt. With
the help of a large/medium egg beater, mix it well.
Ø Add 2 cups of all-purpose flour and
mix it well. It does not require a rigorous mix, but ensure that there are no
lumps.
Ø Once you have incorporated the ingredients
together, finally add the Choco chips and give it a light mix.
Ø Scoop the batter into your muffin
tray/molds and place it inside the pre-heated oven for 20-25 mins.
Ø Having said that, remember every
oven is different and the temperature does differ. So keep checking your muffins
after 15 mins. You know it’s cooked, when a toothpick inserted in the middle of
the muffins would come clean without any mess.
Ø Once you know the muffins are ready!
Turn off the oven and remove the muffins from it and allow it to cool for 5-10
mins before taking them out of the molds.
Ø After 10 mins remove them from the
molds and your banana muffins are ready to be served!
