Chicken with mustard and fresh cream
Servings 2-3
Ingredients:
1. Chicken Breast/Chicken Drumsticks- 2
2. Carrot- 3 diced into medium sized
cubes.
3. Broccoli- ½ cut into small florets.
4. Bell Pepper- 1-2 diced into medium
sized cubes.
5. Black/Yellow Mustard- 1 Tablespoon.
6. Garlic- 5 cloves finely chopped.
7. Leek- roughly diced.
8. Thyme (Fresh or Dried) - 1 tablespoon.
9. Fresh Cream- 2-3 tablespoon
10. Chicken Stock- 2 cups.
11. Salt
12. Butter/Olive oil- 1 tablespoon
Preparation:
Ø Wash the chicken, pat dry and make
some slits on it. Sprinkle some salt, pepper and keep it aside.
Ø In a pan, add olive oil and once it
is heated add Chicken. Once the chicken nice and brown on one size flip it over
to the other side.
Ø Once the chicken is half way cooked,
add finely chopped garlic, diced leek, carrots, broccoli, thyme and pepper.
Allow it to cook for 5 minutes.
Ø Then add 1 tablespoon of mustard, give
it a nice stir and add the chicken stock. Allow the flavour to bind together and
add salt.
Ø Once the chicken is cooked and you
are happy with the flavour, add fresh cream. Give everything a good mix and a
very creamy, delicious pan chicken is ready to be served.
Enjoy it
with a glass of bubbly and some white rice or pasta or with a rustic bread and
butter.
