Chilly Garlic Prawns

Ingredients:
- Tiger Prawns- 250 grams
- Garlic- 3 cloves finely chopped.
- White Wine- 1/2 cup
- Lime Juice- 2 tablespoon.
- Parsley- 3-4 strands finely chopped.
- Green chillies- 2 finely chopped.
- Oil- 2 tablespoon of Olive oil.
- Salt to taste.
- Sugar- A pinch!
Process:
- Wash and de-vain the Prawns(either with heads attached or remove the heads) with salt and warm water and keep it aside.
- Finely chop 3 cloves of garlic, 4 strands of parsley and 2 green chilies.
- In a pan heat 2 tablespoon of olive oil. Once the oil is slightly heated add the chopped garlic and sauté it until the raw flavour from the garlic is gone. Be careful enough not to burn the garlic and add the washed prawns.
- Fry the prawns until they turn pink and add 1/2 cup of white wine and let it cook for a while. (In case you do not prefer wine, you can always add 1/2 of water instead).
- Add lime juice, salt and a pinch of sugar. Let everything combine together in the pan and let it boil until the prawns are cooked through and the juice in the pan has reduced to semi gravy.
- Add the chopped parsley and stir well.
- Turn off the gas and transfer the cooked prawns into a serving bowl.
Enjoy it hot as an accompaniment for your cocktail party's with some Mayo! Or,
Serve it as starter dish with a plate of spaghetti/ pasta or Risotto. Or,
Serve it as a meal on its own with a nice rustic bread and butter!
