Creamy Spaghetti with Prawns
Serving- 2
1.
Spaghetti- ½ packet, Or, As much as you wish to
make.

Prawns- 500gms
3.
Fresh Cream- 2-3 tablespoon
4.
Olive Oil- 3 tablespoon
5.
Garlic- 4 cloves finely chopped.
6.
Parsley (optional) - 3 stems finely chopped
7.
Oregano- 1 teaspoon
8.
Green chilies- 2 finely chopped.
9.
Onion- 1 finely chopped.
10.
Tomato- 1 pureed.
11.
Tomato Ketchup- 4 tablespoon.
12.
Chicken/Vegetable stock- 1 cup.
13.
Salt to taste.

Sugar- ½ teaspoon.
Preparation:
Ø
In a big pot bring water to boil and add spaghetti.
I like to break them into halves but you can boil it as whole. The choice is
entirely yours.
Ø
Once the spaghetti is boiled, strain it with the
help of a strainer and run cold water on it. Add few drops of olive oil, so that
they don’t stick together and keep it aside.
Ø
Wash and clean the prawns and keep them aside.
Ø
Turn the gas on and let the wok get heated.
Ø
Add olive oil and immediately add chopped
garlic, chopped onions and salt to taste.
Ø
Sauté it until the onions are pink and translucent.
Add tomato puree and ½ teaspoon of sugar.
Ø
Once the raw flavour of tomato is gone, add the
prawns and cook until they have started to change colour.
Ø
Once the prawns are almost cooked, add tomato
ketchup and chicken/vegetable stock.
Ø
Add chopped parsley, green chilies and let the
entire thing combine together into a flavoured gravy. The consistency should
not be runny but semi thick.
Ø
With the help of kitchen tongs, remove the
prawns (only) into a bowl.
Ø
Add fresh
cream to the gravy in the wok and add spaghetti. Give it a good mix and
sprinkle some oregano on the top.
Ø
Taste the level of salt. If you are happy with
it, turn off the heat.
Plating:
In a serving dish/plate, first add the spaghetti and then
place the prawns on the top; sprinkle some oregano and serve it hot! It goes perfectly
well with white or rose wine.
